The following recipe is for eggplant mini-pizzas.
I love pizza. I’ve tried it in many of its incarnations, and I pretty much loved them all. One of my favorites is the eggplant mini-pizza. It is low in carbs, a good source of fiber, and it is lower calorie than bread crust pizzas. Here is the recipe that I use to make mine:
Ingredients:
- 1 medium eggplant
- 1 cup parmesan cheese
- 1 cup shredded low-fat mozzarella cheese
- 2 cups pizza (or spaghetti) sauce
- 1/4-1/2 cup olive oil
Directions:
Preheat oven to 350 degrees. Wash the eggplant, then cut it into 1/2″ to 3/4″ slices. Pat the slices dry with a paper towel. Brush the eggplant slices with a light coating of olive oil. Put them on a non-stick cooking sheet or aluminum foil and bake at 350 degrees for 30 minutes. (Undercooked eggplant can have a slightly bitter taste and may be a little harder on the digestive system)
Next, take the eggplant out of the oven, and set the oven to
broil. Then top your eggplant slices with the desired
amount of sauce and cheese, then return to the oven for 4-6
minutes. They are done when the cheese is melted.
