What white wine do you use when your recipe calls for white wine?

I'm going to try to remake a recipe from a restaurant I went to ... it was shrimp, mushrooms, and scallops over a white wine lemon butter sauce on top of fettucini alfredo... taaaaaaaaaaaaalk about yum. It was totally perfect and I think with angel hair pasta it's going to be even more perfecter hehehe.
What wine do you use with a white wine sauce? Any help would be greatly appreciated. :)
And what if I don't want to use wine at all?

I love a gorgeous white wine lemon butter sauce...use a Sauvignon Blanc or any other dry white wine (and be sure to sip as you cook!). Now, was the sauce a little creamy besides the butter? You don't want your sauce to break... I love the idea of the angel hair pasta, less sauce needed and still so tasty! I would always use wine but if you are cooking for others that can't then you can use chicken broth.

hahahha love the answers. :) My Uncle said to use a chablee when you're making a white wine sauce ... he said he has a very educated pallet and that means what to me? hahahah I think it means he knows his wine. I really do need to get into the wine thing. :) The only ones I've ever found that I liked were banf or something like that chianti ... and in champaign the asti spumonte oh goodness that is so good with thanksgiving turkey. hehehe :)
maileshark it was sooooo creamy ... that's why i'm so dyin for it hahahah I got everything 'cept the wine today ... will go pick that up while my son is at school tomorrow. :) For Sure!!! hehehe :)
