With days getting cooler, a bubbling pot of chili is a great meal that the entire family will enjoy.  I grew up in Oklahoma, so my chili preferences tend towards a Texas red style, as opposed to the slightly sweet version from the midwest. 

My take on chili includes ground beef, veggies, and a little heat.  This one pot meal is quick to throw together, the only time consuming aspect is that it needs to simmer for several hours.  In the meantime, it makes the whole house smell amazing.  As a bonus, I've found it's a great way to sneak veggies into my kids!

Ingredients

2 pounds of ground beef
2 medium onions, diced
3 stalks celery, diced
1 red bell pepper, diced
1 can of red beans (drained)
1 large can of diced tomatoes with juice (28 oz)
1 fresh jalapeno pepper, seeded, de-veined, and finely minced
3 T chili powder
2 cloves of garlic, minced
1 t black pepper
1 t salt

Directions
Add ground beef and onions to a stock pot, and cook until browned over a medium heat (about 10 minutes), breaking up large chunks as you go along.  Drain fat from the meat.  Add the rest of the ingredients and stir to combined.  Add six cups of water to the pot, and stir again.  Allow the mixture to come to a boil, then cover and simmer over a low heat for 2 to 2 1/2 hours.

Serve family style with bowls of shredded cheddar cheese, chopped onion, diced fresh tomatoes, sour cream and warm slices of cornbread.

    It wouldn't be time consuming it you put all into a crock pot and just let the pot do the work.

    By the time I go grocery shopping and get home to prepare this it'll be 10 o'clock before we eat, I think I'll make it tomorrow instead.....

    Hmm, I think I'll use ground turkey instead and serve it with cornbread and a salad.
