Prep everything on the weekends when you have time to enjoy chopping up celery instead of power chopping it on Wednesday night before church!
BREAKFAST
People always think breakfast takes so long. It doesn't. Frying an egg takes no time at all. Scrambled eggs take 5 minutes at the most. Make scrambled eggs throw some olives and scallions in it, make toast and put olive oil butter on it. So good! Also people don't know this but scrambled eggs can be refridgerated and frozen and they taste just as good, just heat them up in the microwave, they do it on breakfast sandwiches and stuff and they're fine right?
Lunch
I get all my sandwich stuff on Sundays. I have some plastic containers and I do this. All of my containers are rectangle shaped and some are one big container and some have dividers in the middle.
I make the following:
Big Container: break up an entire head of lettuce into big pieces
Small Divided Container: Put ham in one side and turkey in the other
Small Divided Container: Provelone on one side Munster on the other
Small Divided Container: Put sliced onions and sliced tomatoes
Small Divided Container: Put pickles in one side cilantro in the other
**Note: You might want to put your onions in a totally separate conainer and of course you'll want to drain everything real well. Cilantro you'll want to put in a wet paper towel.
During the week you can do this so fast!
Get a plate put some bread on it, put mustard/mayo whatever you put on yours, grab the containers and open 'em all up, grab a piece of each thing and VWALLA you have a GREAT tastey sandwich in a minute. Put all the lids back on and put them in the fridge. Cut it in half, put a pickle on the plate and some chips or something and you have a great meal for lunch.
DINNER
Boil some angel hair pasta (takes 15 minutes at the most) drain, put back in the same pan, put some cream of mushroom soup in it, lots of parsley, throw some canned or already made chicken breast in there. Have a long loaf of bread ready to go. Put a small saucer on the table, put some parsley/salt/cracked pepper/on the plate then pour EVOO over the top and use it for dipping the bread in... NO DOUBLE DIPPING so I usually have these real cute little ceramic and glass plates I get at garage sales and make individual dipping sauces for the bread. There you have it. A meal in 20 minutes!
There you go. Your entire day of food made in 30-45 minutes! And all healthy and good for you.
FYI I do all my (veggie and meat) prepping on the weekends too. My son and I have a blast doing it on Satudays and Sundays. And it's really helped him to love celery, bell peppers, etc. He even eats onions and taters and everything. He's 2. I cut all my veggies and stuff, cook all the meat, etc. The other day I diced up the following: 2 bags of red potatoes, green onions, red bell peppers, carrots, onions, celery, and it's all in bags in the freezer so I can just grab it or set it out in the morning to thaw. It's all done at once, I only have to clean all the pans and stuff one time, and during the week I just heat everything up. I think it's usually just as good as eating it during the week too. :) Ok done babblin!
