Beach Food Ideas needed

I have a couple cute ideas from Martha Stewart, but need some for the main course.

Going to make a dinner for church and wanted some ideas.

The theme is At The Beach / Footprints in the Sand.

Desert is going to be these totally cute cupcakes.

One will have blue and white wavey icing with a paper shark fin in it.

The other will have icing on it rolled in gram crackers or cinnamon and sugar and tiny cocktail umbrellas in it. Totally cuteness idea from Martha! hhehe I LOVE her new line by the way. It's screaming fabulous! heheh

Any suggestions on cute ideas to do for the dinner part? I will be serving about 10-30 people.

    Coconut chicken of some sort? Hot dogs with pineapple topping? Rice with coconut curry sauce?
